Sold in 1 lb. packs. Not too lean, not too fatty! But it certainly makes a fabulous hamburger, memorable meat loaf and tasty tacos!
This is a lean ground beef. Closer to 90/10 or even 97/3
1"-2" cubes, 1.0-1.5 lbs. per pack.
Versatile as stew meat, braises nicely since their smaller pieces it's tender in an hour, or as a no fail crock pot recipe.
A southern favorite! Country Fried Steak, Chicken fried steak...however you name it....it's all southern fried goodness! 4 pieces per pack and each pack is 1-1.5 lbs. 4 pieces per pack.
Low and slow, slathered in BBQ sauce, covered tightly and oven roasted. OR, braised in a dutch oven with a rich tomato and beef broth liquid.

This is the cut used in Osso Bucco. I've cooked them in the pressure cooker, the crock pot and braised them too. Throw one in the pot with your veg or bean soup for added flavor. These have a cross section of the shank bone and a nice hunk of marrow! 1" or 2" thickness.

The perfect roast for summer....Brine it overnight, pour off brine, put it in the oven at 500 for 7 minutes/lb. then turn off oven and leave it in for 2.5 hrs., slice and serve! This is a lean cut and brining makes it juicy!

Cooks just like a chuck roast only with that bone in you get even more beefy rich flavor! Its a small round bone full of marrow which makes it even more rich and delicious than a chuck. These are usually a bit larger than a chuck.
The fat cap on this roast makes it perfect for crock pot or instant pot cooking! A roast that will fall apart after cooking and melt in your mouth.
